Tender chicken bites, creamy pepper cogniac sauce, saute mushrooms and confit potato bites. This is just a food paradise.
Creamy Pepper Chicken
Ingredients
- 300 gr chicken breast or thighs
- 250 gr portobello mushrooms in slices
- 1 potato diced
- 330ml heavy cream
- 100 ml cogniac (of choice)
- 1 tbsp freshly ground pepper
- 50 gr butter diced
Instructions
- Cut the chicken in thin slices and the mushrooms in think slices.
- In a small oven pan add the potato diced. Almost cover them with olive oil. Add garlic, pepper,salt, and thyme. Bake in a preheat oven fro 20 mins in 180℃
- Preheat a non-stick pan at medium heat and add a drizzle of olive oil. Cook the chicken slices untill they start to get brown. Remove them from the pan and add the mushrooms.
- Saute mushrooms for 1 min, then add back the chicken. Add cogniac in to cool things down and let the alcochol to evaporate. Add the heavy cream and let it cook at medium heat for 10 minutes or until the sauce is thick.
- For finishing add butter in and mix for a perfect glaze.
