Garlic Shrimp Pasta

Ingredients
  

  • 500 gr pasta (of your choice)
  • 300 gr shrimps with shell on
  • 3 gloves garlic diced
  • 1 onion diced
  • 1 carrot diced
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp pepper
  • 1 shot red wine (optional)

Instructions
 

  • Start by deshelling the shrimps. Be gentle with the process. Just turn them belly facing up and peel with your hands. You can keep tail and head on. Don't throw away the shells because we need them for the bisque (sauce).
  • After peeling all the shells off, lay the shrimps on a kitchen paper. Get a knife and make a small cut to the belly from head to tail. That black string is what we don't need. Remove it. This is how we devain the shrimps.
  • Get a pan and add a drizzle of olive oil. Add the shells, onion, garlic and carrot and cook in medium heat untill they start to caramelize. At that time add the tomato paste and cook in high heat for 1 minute. Add the shot of wine and let the alcochol to steam out. Add 200 ml water and let it boil in medium low heat for 10 min.
  • In a pot add water and salt. Bring to a boil and add pasta. Boil for 7 min. ( We will cook extra 2-3 min in sauce).
  • After 10 minutes add the sauce to a blader and smash. In a pan add a drizzle of olive oil and and cook the shrimps in high heat for 1:30 min per side. Remove them from pan and reduce heat to medium.
  • Strain the sauce from the blader straight to the pan through a strainer. Add the shrimps in. Add pasta straight from the pot. Cook untill all igredients combined and perfectly glazed.
