Diablo 4 nights inspired me to create the Diablo Burger! Spicy,crunchy and juicy, it get’s you fueled for endless grinding!

The Diablo Burger

Ingredients
  

  • 1 burger bun
  • 250 gr ground beef
  • 100 gr radicchio
  • 100 gr grated cheddar
  • 2 tbsp siracha sauce
  • 1 tbsp mayo
  • 30 gr doritos smashed
  • 2 red peppers
  • 1 slice tomato
  • salt, pepper & paprika

Instructions
 

  • Preheat a pan at medium-hight heat.
  • Season the ground beef and form 2 equal patties. Add them in the pan and cook for 2:30 minutes per side, then add cheddar on top and let it melt.
  • Finely chop the radicchio and trasnfer it in a bowl. Add mayo and siracha, then mix well till all igredients combined.
  • Cut the pepper edges and staff them with grated cheddar. Cook in a preheated pan for couple minutes untill the cheese is melted. Remove the peppers and quickly toast the burger bun.
  • Smash the doritos and tranfer them in a plate. Spread siracha sauce on the top burger bun and cover it with doritos. Pierce the pepper edges with toothpicks and stick them on the bun to make the horns effect.
  • Assemble this beauty and enjoy!

Spicy Veggie Pasta

Ingredients
  

  • 500 gr pasta
  • 100 gr tomato paste
  • 2 eggplants
  • 2 chilli peppers
  • ½ onion diced
  • 3 gloves garlic diced
  • 10-12 oregano leaves
  • 100 gr grana padano grated

Instructions
 

  • Get a pot and add water. Add salt and let it boil.
  • When water starts boiling add your pasta and cook for 6-7 min. ( We will cook extra 2 minutes in the sauce)
  • While pasta is cooking, get your skillet and add olive oil. Let it get some temperature in medium heat. Dice onion, garlic gloves and add them in. Cut your eggplants in cubes and your chilli peppers in stripes. Add them in the pan season them and go full heat. Stir for 1-2 min.
  • Strain your pasta but keep 1 cup of pasta water. Add oil to your pasta so it won't stick while we are preparing our sauce.
  • Add the tomato paste in the pan and mix. Add the pasta water to the sauce and reduce heat to medium. Let it cook for 3-4 min or untill it's more "thick".
  • Add pasta in and mix with the veggies . Add the grated cheese and keep stiring untill cheese is incoporated. Serve hot and top with freshly chopped oregano leaves.

BBQ GLAZED PORK BELLY

Juicy barbeque glazed pork belly bites will make you mouth watering. Smokey flavor, a little bit of spicyness and crispy skin. It just can’t go wrong.

BBQ Glazed Pork Belly

Marinade Time 2 hours

Ingredients
  

  • 1 kg pork belly
  • 250 gr salt
  • 200 gr barbeque sauce

Marinade

  • 60 ml soy sauce
  • 80 ml rice wine
  • 2 tbsp sugar
  • 2 cloves garlic diced

Instructions
 

  • Using a paper towel swipe the skin of the pork untill you make it dry. With a fork do some holes all over the skin.
  • Mix marinade ingredients in a bowl and then pour into a rectangular pan that is big enough to hold the pork belly.
  • Place the pork belly into the pan, making sure only the meat touches the marinade and the skin stays completely dry. ( You can cook right away but letting it rest in marinade is recommended.)
  • Preheat the oven at 180℃
  • Pour 1 inch of water into bottom of oven tray. Place wire rack on top of oven tray to hold the pork belly. Rub the meat of the pork belly with seasonings of your choice and place it on the wire rack. The pork belly will cook above the water, with the pork fat dripping down below into the water.
  • Spread the salt evenly across the pork belly skin. Place into top half of oven. Bake for about 45-50 minutes until meat looks cooked.
  • Remove pork belly and increase oven temperature to 240℃. The salt that was poured over pork belly should have formed a crust. Remove salt crust from pork belly. Wipe off any excess salt from the pork belly skin, then rub all the meat with barbeque sauce.
  • Once oven has reached desired temperature, place pork belly back into oven.  Bake for another 30 minutes until skin is completely bubbly and crisp. Let pork belly cool a few minutes before cutting and serving.
