Aglio e olio

Ingredients
  

  • 500 gr pasta (of your choice)
  • 100 ml olive oil extra virgin
  • 10 gloves garlic
  • 1 diced chilli pepper (optional)

Instructions
 

  • Get a pot add water and a lot of salt. You want it to taste like sea salt.
  • Bring the water to boil and add your pasta in. Cook for 6-7 min or untill al dente.
  • While pasta is cooking peel the garlic gloves. Don't cut them! By cutting them you reduce the time that they will last in the oil so you'll got less flavor in the sauce.
  • Cook the whole gloves at medium heat by striring frequently. You want a nice golden brown colour. Remove the gloves on a kitchen paper to absorb the oil from them. Let them cool down for 1 minute, then cut them into thin slices and add them again in the pan for a fast cook.
  • By that time add your pasta straight from the pot. By that way you will get some pasta water in there too, so it will help your sauce to glaze.
  • Cook for 1-2 minutes at medium-high heat. Add some freshly chopped parsley, pepper or cheese if you want to.
