Amatriciana

Amatriciana is like carbonara but you swap the eggs with tomato. Guanciale, tomato juice, parmesan and chilli pepper flakes.

Ingredients
- 500 gr pasta (of your choice)
- 330 ml tomato juice
- 250 gr guanciale or pancetta or bacon diced
- 1 pinch salt
- 1 pinch pepper
- 1 pinch chilli pepper flakes (optional)
- 100 ml water or broth
- 200 gr parmesan cheese grated
Instructions
- Get a pot and add water & salt. Bring to a boil ,then add the pasta and cook for 7 min. ( We will cook for extra 2-3 min in the sauce). Then drain the pasta.
- In a cold pan add the guanciale or pancetta or bacon. Cook untill all the fat from the pork is melted and the pork is a nice golden brown color.
- Add the chilli pepper flakes (optional), tomato juice, salt ,pepper and water or broth.
- Cook at medium heat untill the sauce starts to glaze. Add pasta in and cook for about 2-3 minuntes.
- Add grated parmesan cheese in the pan and give a couple stirs. Serve hot!
